I wanted to make some soup for a neighbor recently. She's a vegetarian though, so chicken noodle kind of went out the window. I started with an onion.
Atlee must have been distracted by the bright, shiny cable TV. She didn't come into the kitchen to beg any onion while I was chopping. I really wanted to say whilst I was chopping, but I thought it might sound a little contrived.
I got a little bored taking pictures of food on the cutting board. See how the carrots and garlic just magically jumped into the pot?
I continued on. Adding red pepper.
Oh- look! Chopped spinach jumped into the pot, too. Right about here is when I started to think about adding bacon. If I ever want my husband to eat this, I had better add bacon to the ingredients. This time though- no bacon.
Instead, we add cubed tofu. Rich was out of town the last few days for work. He's happier if he's out of town when tofu's in the house.
Then I added some vegetable broth. Every time I've ever tried to make a good broth or stock, I've failed. I've given up. It's like pie crust. I know how it's supposed to work, but it just doesn't. After I added the broth, I figured the soup should simmer for a bit.
While the soup simmered, I looked around the kitchen and saw a few different things. First, did I mention Greeley's been sick the last few days? She's not quite her usual charming self.
Second, my sink was overflowing with the cooking efforts.
Third, I'm looking forward to replacing our kitchen cabinets some day.
I think they need to be replaced.
The microwave will be going away when the cabinets do. It won't be anytime soon. Someday.
The wall between the kitchen and dining room's going to go too.
While I waited for the soup to simmer, I realized I should bring a dessert to our other neighbor's house. She was having a few neighbors over for dinner. Did I already tell you I love this neighborhood? Anywho, I had a left over pie crust from the Labor Day breakfast shindig. (Remember, I can't make pie crust.) I also had some raspberries from the mountain house and plums from Uncle Michael.
Greeley heard we were going to the neighbor's house for pizza and cheered right up.
I told you this post was going to be long and rambling.

poor Greeley! Oh, love - you look SOO unhappy in that first pic. I just want to hold you until you feel better!!
Sue - lookin' yummy!!!!!!!
What time is dinner?
I thought that dessert thing was a stromboli when I first saw it. I was intrigued.
I don't think I've seen Greeley with her hair THAT messed up ever. It was almost like a movie stylist put product in it and created the perfect bedhead.
When you said "I started with an onion," I was like: Is this going to be a "stone soup" story? :)
That soup looks like it was pretty good. Almost like pho, the vietnamese dish. Who's this vegetarian neighbor? Since when are there vegetarians in our ("our") neighborhood?
I had to see the Greeley picture again when I was re-reading the post - good God, that thing is scary. It's a good thing it's not in focus - I might have fallen out of my chair.
Hope it all was received deliciously! I'm sure it was. And I hope Greeley feels better soon - That photo is horrifying. Thought it might have been Linda Blair. (Seriously.)
Mmmmmm. Berries.
Dude, you are MY kind of neighbor.
Greeley... Oh dear. She's looked better, that's for sure. That first picture was a bit scary, eh?
Hope she's feeling better.
I hope Greeley is feeling better. Your cooking looks great, getting hungry already.
Hope Shea is enjoying school.
Love you all. Katrina
So glad to see Greeley happy by the end of your seemingly not-so-long-and-rambling post :)
You sound like me - who has time to make stock? The veggies in THIS house are eaten, not cooked to oblivion. And it's great to know you have a 'box of stock' in one's cupboard when unplanned but needed. I was going to say whilst also, but it *does* seem a bit "old timey" or something, no? (I do use it when writing articles for the local SCA newsletter tho. Being a medieval re-enactor, I get to use it more often than the norm... lucky me?)
I love reading your posts, Sue, even tho I don't post often, and the kids LOVE seeing pictures of your littl'uns.
Eight days without a post?!!
Hey, get back to blogging there, young lady. Inquiring minds want to know if cable TV has destroyed the Gettysburg Family blog.
Where you been, girl? Hope things are ok!
I concur. Where are you?
I had to scrape the frost off my car this morning!!
